When Chef Patrick Feges puts his mind to cooking up something special, nothing is too big of a challenge. Not even a 300-pound hog. Known in Houston as the “Whole Hog Guy,” Feges is a self-taught pit master who attended the Texas Culinary Academy. He caught the barbecue bug while recovering from injuries suffered while serving in Iraq. In 2012, Feges purchased a large smoking rig and began catering events and executing pop-ups, cooking the nontraditional smoked cuts for which he’s now known—everything from pig wings (pork shank) to beef-belly burnt ends.
As Feges worked to get his own business fired up, he trained in some of Houston’s most acclaimed kitchens, including Killen’s Barbecue, Southern Goods and Underbelly. Feges and his wife, Chef Erin Smith, opened Feges BBQ in March 2018. Since opening, Feges BBQ has already been named one of the Best BBQ Joints in America by Thrillist and was awarded four stars by Texas Monthly.
