Chef Gio Osso’s love for food goes way, way back: his earliest memory of cooking is sitting a highchair, stirring an empty pot and “helping” his mother prepare meals. While his culinary interest started at home in Cliffside Park, New Jersey, Osso credits his true inspiration to summers spent in Southern Italy on a farm in Calabria, cooking cherished family recipes.
After graduating from the New York Restaurant School at the top of his class, Osso quickly made his mark by joining distinguished kitchens across the country, with notable roles such as sous chef at the Sonoma Grill in East Rutherford, New Jersey; executive chef at Fio’s Ristorante in Stamford, Connecticut and executive chef at the Estate House in Scottsdale, Arizona.
Today, Osso captures the dynamism of authentic Mediterranean cooking as the owner and executive chef at Virtù Honest Craft in Scottsdale’s Bespoke Inn. To allow himself the freedom to prepare dishes that are bold, flavorful, clean and straightforward, Osso spends as much time as necessary to find the ideal ingredients—be it seafood from Spain, cheese from Italy or spices from Africa.
In the wake of Virtù’s success, Osso opened Nico Heirloom Kitchen as a posh, sophisticated spot for seasonal West Coast-inspired Italian cuisine, in Gilbert, Arizona, in 2016.
