
To say Jessica Foster makes truffles is bit like saying Julia Child dabbled in French cuisine. Foster has raised the art of truffle making to an epicurean art form. She’s constantly on the prowl for new ways to infuse Belgian chocolates with her blends of exotic teas, herbs and spices to create intriguing concoctions, such as milk chocolate star anise and thyme. Her love of artisanal foods and the process of making something special by hand harkens back to being raised on California’s Central Coast, where farmers markets abound. While shopping these days, Foster searches for fresh herbs and ripe fruits to create flavors such as dark chocolate orange or white chocolate lavender, delicious combinations that reflect Santa Barbara’s coastal bounty.
Previously, as a pastry chef at top local Santa Barbara restaurants, Foster learned the crucial culinary skills needed to master working with chocolate. In 2003, she launched Jessica Foster Confections, crafting truffle creations coveted by chocolate lovers around the country.
