For two nights, Montana will be at the center of the culinary universe.
Anticipation for the James Beard Foundation Celebrity Chef Tour Dinner is building faster than a wild mustang can gallop across a meadow. It’s your chance to get a taste of what happens at the James Beard House in New York City—right here in Greenough, Montana.
To kick off our James Beard Dinner weekend, we’ll host a Friday cocktail party where you can get to know the chefs, nosh on native bites and sip a glass of wine. Or two. On Saturday, for our exceptional James Beard Dinner, elite chefs will work together to plate some of the most inventive dishes this side of the Great Divide. Seattle Chef Holly Smith, aka James Beard Best Chef: Northwest 2008, joins Paws Up Executive Chef Sunny Jin of El Bulli fame and Iron Chef winner Chef Beau MacMillan, a veteran of cooking at the James Beard House itself. Our third invitee, San Antonio’s favorite son Chef Jason Dady, is also a James Beard House vet as well as a James Beard Award semifinalist and proprietor of six, yes six, popular Texas eateries. So yes, you can expect some culinary masterpieces. And you can count on Paws Up Sommelier Kyle Griggs to pair select vintages with each dish.
Besides attending the West’s culinary event of the spring, you’ll find time to discover the natural beauty and outdoor adventures that put Paws Up on bucket lists worldwide. From exploring the wilderness on horseback to rafting down Montana’s storied Blackfoot River, staying active is never a problem.
