In Montana, the Trout Rise as Surely as the Sun

“There’s certainly something in angling that tends to produce a serenity of mind.”

Washington Irving may have penned those telling words back east in New York some 200 years ago, but they still very much apply today for anglers on the waters in and around The Resort at Paws Up.

In this fly-fishing mecca, you discover what moves you—what touches your soul—in a pristine natural environment. Is it the unending quest to cleverly imitate nature with man-made flies? The experience of spending time in nature, maybe glimpsing a black bear tearing into a rotting log for her own insect snack? Or maybe, just maybe, it’s simply admiring the stunning beauty of the fish you catch.

Take, for example, a fish like one of western Montana’s lone native trout, the Westslope Cutthroat. With sporting markings on the throat and gill plate like a bright-orange-red bandana, these local residents are beloved for their good looks and feisty fights. And no visitor who’s tussled with one and held it in wet hands before releasing it back into the water goes home with anything less than a story worth repeating many times.

Also lurking in the legendary Blackfoot River are an abundance of silver bullets called rainbows and cutbows, a cutthroat/rainbow hybrid. And, of course, there are their ill-tempered neighbors, the brown trout.

According to Assistant Activities Manager Ben Pepe, the leader of Paws Up’s fishing program, “the Blackfoot, of all these rivers near Missoula, offers the most beautiful setting, with shimmering water running over dappled rocks, Ponderosa pine-lined banks, bald eagles and the occasional river otter—this is River Runs Through It country. It really is the quintessential Rocky Mountain river.”

Guided half-day fly-fishing trips on the Paws Up stretch of the Blackfoot offer guests the advantage of being first on the water, thanks to two private access points. Upstream on the river lies the Box Canyon, another beautiful stretch suitable for full-day, eight-hour trips and trophy fish. Guides can also run longer trips to the brown-trout-laden Bitterroot River or the expansive Clark Fork near Missoula.

It’s not just the fish around here that are big. “The salmon flies—you just don’t see them in other local areas,” Pepe said. “That hatch creates a feeding frenzy, typically in mid- to late June. We like to fish big attractor patterns, some of which mimic stone flies or hoppers.”

Patterns like the Chubby Chernobyl, a favorite of another Paws Up fly-fishing devotee, Executive Assistant Mindy Marcum, who spends much of her off-time on the water. “As it gets later in summer, we’re trying to imitate a grasshopper that’s fallen off a stalk of grass into the water,” she said.

As summer cedes to early fall, Marcum will cohost a Paws Up event, the Wonder Women of Fly-Fishing, September 11–13, with renowned fly-fishing guide Kelly Harrison.

For Mindy Marcum, fly-fishing is all about releasing stress with every cast, as well as “the total relaxation and the togetherness with others.” As she put it most succinctly, “Fly-fishing is my yoga on the water.”

Drunken Beef and Pineapple Brochettes with Guajillo Romesco

 

After searching the West for the highest quality beef and the most tender bison, The Resort at Paws Up settled on a very local source: our own backyard. As the ultimate expression of ranch-to-table cuisine, the Black Angus cattle raised here on the Paws Up Ranch are now part of our beef program, from the open fires of the chuck wagon to our restaurant Pomp’s fine cuisine. Bison, from our herd, are also on the menu.

According to Co-Ranch Manager Leigh Kelley, “We raise peas, oats and barley on properly to fatten some of the beef that now grace the tables here at The Resort. Primarily, all of our beef is grass-fed—the high-quality grass they eat is managed for palatability and nutrition. I think animal feed is much like anything else: the quality you put in is a direct reflection of the quality you get out.”

That principle comes through loud and clear in the form of well-marbled Angus beef products and lean, tasty bison cuts destined for dishes created by Paws Up Executive Chef Sunny Jin.

“The ranch-raised beef really is a source of pride for us. The grass-fed aspect produces flavors that are so pronounced. And we get such depth of flavors from aging the beef, for example, we get a whole porterhouse and dry-age it here for an additional 45 days, after an initial aging,” Jin said. “That’s when it gets that rich, buttery flavor with a great blue-cheese aroma.”

This summer, expect our chefs to turn out a dizzying array of culinary masterpieces, a growing number of which are based on Paws Up Ranch-raised Angus beef and bison. We hope you enjoy this recipe for Memorial Day weekend or anytime this summer.

DRUNKEN BEEF and PINEAPPLE BROCHETTES with GUAJILLO ROMESCO

For the Brochettes

Ingredients:

2 pounds tender beef, such as tenderloin or ribeye, cut into 1-inch cubes

2 red onions, cut into 1-inch pieces

1 ripe pineapple, cut into 1-inch cubes

2 red bell peppers, cut into 1-inch pieces

3 ounces mescal

1 Tbsp brown sugar

Fresh juice of 2 ripe limes

8 skewers (if using wooden skewers be sure to soak in water for at least an hour prior to assembling)

Sea salt

Cracked pepper

DIRECTIONS:

Combine all prepared brochette ingredients into a nonreactive mixing bowl and toss to coat evenly. Marinate for at least 30 minutes and up to 2 hours. Preheat gas or charcoal grill and begin assembling brochettes by placing an even amount of each ingredient on the 8 prepared skewers. Place brochettes directly over the hottest spot of the grill and cook 1–2 minutes on each side. Finish with coarse sea salt and fresh cracked pepper and serve with Guajillo Romesco.

For the Guajillo Romesco

Ingredients:

4 whole dried guajillo peppers, rehydrated in hot water and deseeded

1/2 cup toasted almonds

whole garlic cloves

1/2 cup sun-dried tomatoes, rehydrated in hot water

2 tsp smoked paprika

2 tsp ground cumin

2 tsp ground coriander

1 red onion, sliced thin and grilled until softened and slightly charred

2 tsp kosher salt

1 cup Spanish olive oil

Sherry or red wine vinegar

DIRECTIONS:

Combine all ingredients except vinegar and oil into a blender or food processor. Blend ingredients and slowly drizzle in the olive oil until the sauce comes together and ingredients are finely ground. Season to your liking with vinegar.

The Resort at Paws Up Welcomes Austin Grill Master Evan LeRoy for BBQ-U

Comfortable around a live fire from a young age, Chef Evan LeRoy’s culinary experiences range from fine dining at Hudson’s on the Bend to barbecue at Hill Country Barbecue. LeRoy was named as one of Zagat’s 30 Under 30 rising stars in the Austin culinary scene. LeRoy has appeared on Burgers, Brew & Que and Food Porn and gained the title of Austin Grill Master on the Travel Channel.

In 2017, LeRoy opened the barbecue truck LeRoy and Lewis, with a rotating menu of nontraditional meats and cuts and a working motto of “new school barbecue, old school service.” LeRoy has also traveled to Australia and Russia to train and work with prospective pit masters and is known for his openness to teaching and sharing smoking secrets. We are thrilled to have him this year for BBQ-U on June 22–24, 2018. We had a chance to sit down with LeRoy for a quick interview.

The last time you visited Paws Up was in 2016, correct? Tell us a little about your favorite memory on our ranch.

Correct. I took a hike through the woods one morning and saw a bald eagle for the first time in my life. Also, the last day of archery with my wife was fun and competitive.

What activity are you most excited about trying on property?

I’m most interested in doing some fishing this trip. I was not able to do that last time, and it seems like fun.

How did you become interested in barbecue?

I’ve been interested in barbecue for a long time. Since I was a kid cooking in the backyard with my dad. It’s more than an interest growing up in Texas—it’s an ingrained part of our culture.

Can you tell us about the dual smoker, which we hear you’re bringing to Paws Up? And why it’s called “the twins”?

Between leaving Freedmen’s (my last BBQ job) and opening LeRoy and Lewis, I taught some classes to keep me busy, keep money coming in and to stay relevant in the barbecue scene. I liked the idea of cooking with people and connecting with people over BBQ on a deeper level. One of my students was Sheldon Mason from Montana. He has his own pop-up BBQ business, and he designed the pits for capacity and travel—as two back-to-back smokers that mirror one another.

Can you explain what you mean by “new school barbecue”?

As the next generation of Texans who are carrying this tradition of barbecue into the next decades, it’s our responsibility to put our own stamp on it, improve it and give it to those who come after us. New school BBQ is about taking the method and soul of BBQ and injecting new life into it with updates on classic cuts, global flavor profiles and modern hospitality.

What is your favorite thing to cook at home?
Vegetables, mostly in pasta and stir fries. I like to keep it simple and use herbs from my garden. I also use a lot of eggs.

What is your favorite cooking show on television?

Used to be Good Eats. Now it’s Mind of a Chef.

Is there something you’ve never grilled that you want to attempt?

I’ve never cooked a fish I caught on the beach or on a shore. I would love to do that.

 What travel destination is next on your bucket list?

Germany, Hawaii, Italy.

If you could cook alongside one barbecue chef, who would it be?

I would love to cook with Tootsie Tomanetz from Snow’s BBQ in Lexington, TX.

Have You Heard of Cow Croquet?

If you’re coming to visit Paws Up this winter, we have a new winter challenge. Show your mastery of wrangling cattle by taking part in our new equestrian adventure, Cow Croquet. You and three of your cowboy/cowgirl friends will mount horses in the Saddle Club’s indoor arena and try to guide cows through one of five gates—just as if you were knocking croquet balls through metal hoops in the back yard. You will compete against another team of four players, and each team takes turns to try to “push” the cows through the selected gate. The leader/referee of the match yells out the selected gate (1–5) at the beginning of each round, and each team is timed on how long it takes to get the cows through the gate. The team with the best results and times wins! The idea to offer this new activity came from The Resort’s own Equestrian Manager Jackie Kecskes. We sat down with Kecskes to find out more about this creative idea and to get her thoughts on wintertime at Paws Up.

HOW DID YOU COME UP WITH THE IDEA

FOR COW CROQUET?

I bought a border collie last October and was watching a lot of training videos online. I knew if he’s going to live on a ranch he should be handy. I kept coming across videos of sheepdog trials (where the border collie must herd sheep through a series of gates, independent of the human, who is a long distance away whistling directional commands). This got me thinking. We already offer team penning during wintertime, but we were still lacking the cattle drive element that people love so much in the summer—the act of moving a large group of cows as a unit. I set up some gates in the arena, substituted cows for sheep and people on horseback for a border collie, and that is how cow croquet was born.

HOW LONG IS THIS ACTIVITY?

It takes two hours from start to finish.

WILL THIS ACTIVITY ONLY BE OFFERED IN THE WINTER MONTHS?

Yes. It is a winter exclusive!

WHAT’S YOUR FAVORITE THING ABOUT WINTERTIME AT PAWS UP?

The atmosphere—everything seems to get very quiet,

despite all the hustle and bustle of our guests doing activities

and enjoying the snow. There’s something about the ranch

getting blanketed in fresh snow that makes it magical.

WHAT OTHER EQUESTRIAN ACTIVITIES DO YOU OFFER IN THE WINTER?

What don’t we offer would be the better question; we offer everything

from trail rides to indoor team penning and Cow Croquet

Meet AdrenZen Fitness Expert Idalis Valazquez

Idalis Velazquez

A wife and proud mother of two girls, a personal trainer certified by the National Academy of Sports Medicine (NASM) and a former elite track-and-field athlete, Idalis Velazquez is a top expert in total body fitness. Velazquez specializes in fast and effective workouts that help busy people get the results they want in the time they have. Velazquez’s workouts and fitness tips have been featured in too many national publications, websites and TV shows to list. Paws Up is thrilled to have her as the featured fitness expert at the AdrenZen: Fall wellness weekend on October 20–23, 2017.

Paws Up: How would you describe your fitness style?

Velazquez: My fitness style is all about time-efficient workouts and building sustainable habits. The workouts and programs I create combine resistance training and are metabolic, meaning you will challenge your cardio and keep your metabolism revving for hours after you are done. I’m tough, but more of a cheerleader with those I train to help them unleash their fullest potential and keep them motivated.

Paws Up: How many times a week do you work out?

Velazquez: Four to six times a week. These workouts can last 15 to 60 minutes long, depending on the workout.

Paws Up: What is your top weight loss tip?

Velazquez:

  • Focus on building positive and healthy habits instead of creating restriction.
  • Learn to be mindful with your nutrition and exercise routine. Consistent application of small, sustainable habits along with your workouts will help you reach your goals.
  • When it comes to training for weight loss and fat loss, prioritize strength training and don’t overdo the cardio.
  • Resistance training builds lean muscle mass, which helps you burn calories and fat all day long and boost your metabolism. You’ll feel younger and energized and achieve the “toned” look most people want.

Paws Up: How do you keep yourself motivated?

Velazquez: I see fitness and living a healthier lifestyle as tools that help me be at my best physically, mentally and emotionally. I challenge myself during my workouts, but I also have fun. Knowing that caring for my body and mind will help me feel and be at my very best keeps me motivated. Plus, it’s nice to look in the mirror and see how this lifestyle pays off.

Paws Up: What inspires you?

Velazquez: My kind and loving daughters. The way they look at me and look up to me. Knowing that the way I live my life and that my habits and behaviors will have a huge impact in their life inspires me.

The community I’ve built through my social media also is inspiring. Knowing that I’m helping to reach a follower’s goals is priceless. I know that many of them don’t have a personal trainer nor gym memberships, and they have chosen to follow my workouts and tips. They inspired me to get creative with exercises and workout ideas that will keep them motivated to get their sweat on anywhere.

Paws Up: Why are you excited to visit Paws Up?

Velazquez: All of it! Every time I plan a vacation with my husband, I always tell him that my ideal vacation includes a beautiful resort surrounded by nature where I can just disconnect and enjoy fitness, healthy meals, rest and relaxation with spa treatments. Paws Up: What advice would you give to someone who is trying to regain their fitness or start a new program?

Velazquez: Just start! Focus on what your body can do, rather than on what it hasn’t mastered yet. Create a plan, do your best and stay consistent. Even if you start with 15 minutes a day. Set positive, performance-related goals, since these will help you stay motivated and empowered.

Reach for the Sky This Summer at Paws Up

It may seem peaceful when you arrive at The Resort at Paws Up this summer, but we’ve been hard at work bringing four exhilarating new activities to life. With last year’s introduction of the Sky Line Aerial Adventure Park, guests climbed, swung and maneuvered their way among the ropes and platforms. New this year is the Challenge Course, with elements that are more difficult and higher off the ground, plus a quick drop that’s about 55 feet up in the air.

Mountain bikers will find new thrills, too. Opening this summer is a mile- loop bike park featuring berms, switchbacks, tabletops, whoops and jumps. That’s in addition to our existing trails and the 13.5- mile downhill mountain bike course leaving from Garnet Ghost Town. You can take your pick: grab a map or go for a guided tour.

At the Lake House at Seeley Lake, now there’s paddleboarding. Using concentration and balance, you can either take in the scenery or get a rejuvenating workout. To really stretch yourself, sign up for paddleboard yoga, a great core fitness class.

And for any kids who have dreamed of being cowboys or cowgirls, Paws Up’s brand-new Junior Wrangler Program will give them a durn good glimpse. Eat Drink and Meet Merry

We hinted at celeb sightings, and the first of famous folks to visit Paws Up in 2017 will be Vintners Hall of Fame inductee Merry Edwards, one of California’s first woman winemakers. As part of our inaugural Wine Weekend event, you will clink glasses with Edwards and her vintner partner, Ken Coopersmith.

Highlights include a wine seminar and outdoor adventuring with the winemakers. The crown jewel will be enjoying mouthwatering dinners with expert vino pairings from the Merry Edwards Winery, known for its exquisite Russian River Valley Pinot Noirs. Wine Weekend corresponds with the 20th anniversary of the Merry Edwards Winery, founded in 1997.

This first-ever Wine Weekend will also feature live entertainment, tastings and plenty of hands-on learning (read: plenty of wine sipping!) so you can impress friends at home with your sommelier-like expertise. Burn off the extra indulgences with adrenaline-pumping adventures such as snow tubing, horseback riding or sporting clays shooting. We hope to see you March 16—18. Cheers!

WildFlavor

Saddle up for the ultimate culinary ride with flora, fauna and flavor at our WildFlavor event, April 20—23. The first of its kind at The Resort, WildFlavor will feature cream-of-the-crop culinary talent with four Top Chef stars including Kristen Kish (winner, Season 10), Sam Talbot (finalist, Season 2) Casey Thompson (finalist, Season 3) and Brooke Williamson (runner-up, Season 10). Guests will have a prime spot to watch these chefs “fork it out” during a live cook-off challenge. A trio of expertly crafted meals will be served during the tasty four-day event.

WildFlavor is the perfect blend of food, fun and live entertainment, plus enough outdoor activities to fill up any spaces in between. Special guest singer-songwriter Austin Jenckes (The Voice, Season 5) will be on hand for a soulful Saturday night performance of his folk-rock guitar-based melodies.

Fun spoiler alert: Be sure to tune in to Top Chef before you come for WildFlavor, as Talbot, Thompson and Williamson are all returning to compete in Season 14.

Cowgirl Spring Roundup

We bill this April 27—30 event as the ultimate immersion Into Cowgirl Culture, and that’s a description we take seriously. You can swap Wild West Stories and ride alongside Cowgirl Hall of Fame honorees, including champion rider Sandy Collier, famed artist  Deborah Fellows and equestrian trailblazer Patricia E. Kelly. For three days you will participate in cowgirl skills workshops and a special ranch photography clinic with award-winning photographer Barbara Van Cleve. The Roundup will feature trail rides on horseback, hiking on breathtaking paths across The Resort and relaxing in front of a campfire by every night. You’ll also wrangle and herd cattle across the vast Montana landscape and test your aim at our sporting clays course.

 As much as we love Spa Town in the warmer months, the brisk, fresh winter air didn’t seem right for a relaxing massage. So in wintertime, the secluded Morris Ranch House serves as the warm, cozy location for spa treatments. Located adjacent to the picturesque Elk Creek, this historic luxury home is a perfect setting for rejuvenating spa services and a chance to let our talented staff pamper you and your family.

COLD-WEATHER CUISINE. Dining at Paws Up is always a treat, but for those looking for something truly phenomenal, come for WinterFest, January 19–22, our signature culinary event of the season. It’s three and a half days of intimate cooking classes and demonstrations, wine and spirits tastings, wilderness adventures, live entertainment (Missoula musician John Floridis and singer- songwriter Brian Pounds from TV’s The Voice) and, of course, hearty gourmet feasts—complete with thoughtful wine pairings—created by our award-winning guest chefs.
