Chef’s Favorite Dish | “My favorite dish is currently Sturgeon & Split Pea. The inspiration came from my wife, Christine, when she came home with a bag of split peas and a chunk of ham, saying, ‘You should make split pea soup!’ I wasn’t all that enthused about the idea, but I made it, and it turned out delicious. Shortly after, I brought in some fresh Columbia River sturgeon and had my lightbulb moment. I figured the smoke on the sturgeon could stand in for the smoke from the ham. The dish is rounded out with a caviar beurre blanc and a micro-herb salad of fennel, tarragon, thyme, and dill. It unintentionally became my tip of the cap to split pea soup.”
