Chef Nicole Pederson has a terrific pedigree in food. After culinary school in her hometown of Minneapolis, she gained valuable experience cooking in the south of France. Pederson also worked at Gramercy Tavern in New York and then headed to the Lula Cafe in Chicago, where she honed her passion for all things local. Pederson also held the post of Executive Chef at C-House. While there, she had the privilege of assisting at the White House for the Obama Administration’s first State Dinner.
Pederson’s Midwestern roots contribute to her focus on pure flavors, simplicity and seasonality in her cuisine. All of those factors undoubtedly contributed to her nominations for both a Jean Banchet Rising Star Chef Award, and as Food & Wine People’s Best New Chef for the Great Lakes category. The fact that Pederson is fired up about her cooking is evident in Found’s produce-centric menu, which she prepared with an assist from an open-flame oven.
