Born in St. Louis, Michael Ciapciak always loved restaurants and hospitality. Ciapciak honed his craft in New York’s restaurant world as head maître d’ at Gramercy Tavern and as Blue Hill’s general manager. But Ciapciak wasn’t satisfied to run the front of the house in some of American’s finest dining institutions. He has also traveled the globe as an incognito critic for Forbes Travel Guide, on a global quest to find the world’s best restaurants.
Ciapciak’s varied experience helped to refine his vision for his own establishments: Chicago’s two Bang Bang Pie & Biscuits (Logan Square and Ravenswood). Walk into the pie-shaped shop and your mouth will begin to water as soon as you inhale the aromas and get a look at the display of Ciapciak’s pies and various biscuits.
