"Farm to Table" Dining at Pomp and Trough

Our chef, Wes Coffel, and his team are committed to sustainable dining, practicing "Farm to Table" dining in Paws Up's restaurants, Pomp and Trough. To do so, they incorporate as much locally sourced produce and meat as available, use seasonally appropriate ingredients and always source organically grown products when available.

"Greenough Farms": Our Organic Restaurant Garden and Chicken Coop

New in 2009, the farm has moved closer to the table at Paws Up with the addition of a vegetable and herb garden and a chicken coop next to the old Bull Barn. Aptly named "Greenough Farms", guests will enjoy the ultra-fresh vegetables, herbs and eggs and can poke around in the garden and check out the chickens that are always on.

Employee Transportation Program

Paws Up is committed to reducing its impact in many other ways, including reducing the use of private vehicles by our associates who typically commute from either Missoula or neighboring Seeley Lake. As a benefit to both the environment and our employees, Paws Up owns and operates a retired school bus - complete with a highly entertaining driver - that serves over 30 people each day. We also provide smaller shuttles for odd shifts, as well as daily carpooling reimbursement.

Xeriscape Landscaping at All Homes

Our natural approach to landscape at Paws Up not only looks better as our homes blend beautifully into their natural surroundings, but also conserves water and energy as irrigation is reduced to zero after brief "grow-in" periods required to establish healthy ground cover and maintenance requirements are minimized.

Re-Use of Existing Buildings

Instead of committing resources and energy to new buildings, several of the guest accommodations and most of the resort's facilities such as restaurants, associate housing and offices were created by converting existing and historic ranch buildings and homes.
