You are cordially invited to one of the most unique farm-to-table dining experiences in the country: Bounty on the Blackfoot at The Resort at Paws Up. Enjoy a weekend of culinary immersion, featuring a full Saturday of opportunities to get up-close and personal with Chef Brooke Williamson as she sources, conceptualizes and prepares a once-in-a-lifetime tasting menu. You’ll follow the chef and the ingredients as they travel from the farm to the dinner table, all in one day.
You’ll join Chef Brooke as she shops the Missoula Farmer’s Market in the morning, giving you a chance to see firsthand how Montana’s local foods are grown and raised. The chef will create an exclusive, multicourse tasting menu for that night’s dinner, based completely on what produce, spices and proteins happen to be at their seasonal freshest and best that day. At least one of the dishes will pay homage to the Blackfoot Indians who grew, hunted and harvested their food on the land where Paws Up is located today. All of the featured dishes will highlight the extraordinary agricultural bounty of Montana.
Chef Brooke’s experience on Top Chef Season 10 in Seattle gave her plenty of training for creating spontaneous menus that wowed panel after panel of world-renowned chef judges. She became famous for cooking with local ingredients and including surprising global twists. For these reasons, Chef Brooke and Bounty on the Blackfoot are a perfect pairing, and we’re honored to have her. This menu and experience are not to be missed.
