The Resort at Paws Up Introduces New Cookbook Live Series

Cookbook Live Paws Up

We’re all familiar with a book-signing event. But when it comes to cookbooks (particularly those created by world-renowned chefs), doesn’t it feel like something’s… missing? Here at Paws Up we thought so, and that’s how our Cookbook Live series was born. It’s an incredible opportunity to not only meet the authors, but to go beyond the pages and hear their stories, ask them questions and, of course, taste their incredible recipes.

6 Reasons Why to Visit The Resort at Paws Up This Winter

the-resort-at-paws-up-montana

Every season at The Resort at Paws Up brings change and wonder. Until just this winter, however, few got to witness The Resort under its sparkling white blanket. But that’s about to change. Starting in 2017, The Resort at Paws Up will be open to guests for all 365 days of the year.

snowmobiling-paws-up

WHAT TO LOOK FORWARD TO.
To start with, it’s quieter here during the colder months. Snow under your feet cushions each step. Wildlife comes out from hiding. The mountaintops glisten. Even the hot chocolate just seems sweeter. In a word, it is spectacular.

home-interior the resort at paws up

Day or night, you can sit back and take in the incredible snow-covered scenery. And every one of our luxury vacation homes is equipped with an outdoor hot tub, which can turn a cold snap into an inviting retreat, especially under a starlit sky.

NO TIME FOR CABIN FEVER.
Now more guests than ever can enjoy all the winter activities that we love so much: horse-drawn sleigh rides, ice skating, cross-country skiing, horseback riding through frosted pines, dogsledding, tubing, high- velocity snowmobiling, sporting clay shooting, private indoor equestrian lessons, hiking, archery, snowshoeing and, of course, sitting in front of a relaxing fire.

THRILLING SKI ADVENTURES. Paws Up will also take you on excursions to some some wonderful downhill ski and snowboarding areas. Naturally, we can outfit you with whatever cold-weather gear you need at the Wilderness Outpost retail store.

FOR THE YOUNGER SET.
The Kids Corps of Discovery has a full schedule of exciting activities, from tubing, luge-style sledding and hockey to craft making, pony rides and broomball. We’ll keep the kids busy and active all day long. Or you can teach them the science behind snow fort building yourself, just outside your private vacation home.

THE SPA: A GOOD MOVE.
As much as we love Spa Town in the warmer months, the brisk, fresh winter air didn’t seem right for a relaxing massage. So in wintertime, the secluded Morris Ranch House serves as the warm, cozy location for spa treatments. Located adjacent to the picturesque Elk Creek, this historic luxury home is a perfect setting for rejuvenating spa services and a chance to let our talented staff pamper you and your family.

COLD-WEATHER CUISINE. Dining at Paws Up is always a treat, but for those looking for something truly phenomenal, come for WinterFest, January 19–22, our signature culinary event of the season. It’s three and a half days of intimate cooking classes and demonstrations, wine and spirits tastings, wilderness adventures, live entertainment (Missoula musician John Floridis and singer- songwriter Brian Pounds from TV’s The Voice) and, of course, hearty gourmet feasts—complete with thoughtful wine pairings—created by our award-winning guest chefs.

There’s no shortage of exiting ways to enjoy the drop in temperatures in Montana. And yes, seasonal rates do apply. It’s no wonder we’re already seeing a blizzard of reservations for our first full winter.

Hutterites Paws Up

Fresh and delicious seasonal dishes don’t happen by accident. So for our rich bounty of vegetables, breads and meats, Paws Up has been turning to local experts with a long history in these parts: the Cool Springs Hutterite Colony, the Hillside Colony and other Hutterite farmers. Over the years, Paws Up Executive Chef Ben Jones has found that these communities produce some of the best-tasting foodstuffs in the country—by using natural, time-tested techniques, similar to those used by Amish and Mennonite farmers.

chef-ben-jones-paws-up

Hutterites have been living and working in Montana since first forming colonies in the Dakotas in the 1800s and Canada in the 1900s. The Hutterites also eventually formed colonies in Montana in which they practiced a religious-based communal lifestyle where each individual in a colony was responsible for a specific task. That tradition and culture have not changed much since the early days for Hutterites in Montana, according to current Cool Springs colony resident Jake Waldner.

091516pawsuphutterites-20

Waldner says that Paws Up is the colony’s number-one customer as a purchaser of the bacon, chickens, bread and vegetables that the colony produces. The Hutterites are able to directly deliver and sell goods to customers like Paws Up from their farms, as opposed to selling to stores and then having goods sit on shelves for days or even weeks at a time. But most colonies do not produce goods solely to sell to restaurants and resorts. The livestock and other goods are instead grown and produced for a colony’s use first. Then, when a surplus is generated, those excess goods are made available to outside customers.

091516pawsuphutterites-4

For a resort like Paws Up that specializes in farm-to-table freshness, the goods are always cherished, and our guests can taste the difference between these foods and those that are shipped in. The relationship between Hutterite farmers and the culinary artists at Paws Up adds a delicious, honest, homegrown flavor to every dish we prepare.

An Insiders Look at our Head Wrangler Dustin Call

Dustin Call Wrangler Paws Up

Dustin Call has been riding horses since he was four years old. He grew up riding at his family’s home in Wallburg, North Carolina, and became a member of the United States Pony Club at a young age. Call eventually “fell into the cowboy way” in college, switching to Western saddle riding and even holding down a summer job at a Wild West theme park as a stunt performer. After college, Call knew he wanted to become a professional horseman, so he headed west and became enamored with the cowboy way of life. After landing a job at a ranch in Colorado, Call was able to dedicate his life to caring for and riding horses, as well as educating and leading others in their own horsemanship. Call came to Paws Up as Horse Manager in 2015. He is the leader of Paws Up’s outstanding equestrian program, where he continues to share his love of horses with visitors to the ranch and “anyone with a sense of adventure and an open mind.”

dustin call wrangler paws up1. What’s your favorite thing about working at Paws Up?

Helping to connect people with horses! It’s really at the core of what I love about this resort. I think horses are the most amazing creatures and are truly good for people in so many ways, and here I get to help people rediscover that relationship, or find it for the first time.

2. How is the equestrian experience different at Paws Up than at other ranch destinations?

Our flexibility. For one, we have an amazing array of trails and different times you can ride, anywhere from early morning to chasing the sunset, so no matter what your schedule or vacation style is, we can find a time and a place for you to ride. We also have horses and programs that can engage anyone, from first-time riders to those who ride on a regular basis and have horses of their own.

3. What’s your favorite thing Chef Ben cooks up on the ranch?

The Gnarly Burger! He serves it at breakfast, but I could eat it three meals a day. Talk about stick-to-your-ribs good!

4. What music are you currently listening to?

Hayseed Dixie! Give ’em a try—they’re a good time.

5. If you could ride horses with one famous person, who would it be?

Buck Brannaman, my favorite horseman. You can never stop learning with horses, and he has an amazing amount of knowledge and insight to share. Or Viggo Mortensen—he’s the coolest.

6. When you were young, what did you want to be when you grew up?

An astrophysicist, then an architect, then an actor, then an archaeologist. I’ve covered a lot of ground…

7. What is your second-favorite activity at the ranch? (We know horseback riding is first!)

White water rafting! I own my own boat, but I’m nowhere near as good a captain as our guides are.

8. Besides horseback, what is your favorite method of transportation?

My two feet. I love to hike and run and explore. I’ve hiked most of our trails as well.

9. We know you love all of the horses at Paws Up, but which one edges out the others and why?

My go-to good buddy is Ink. He’s an amazing little ranch horse who I can really get a job done with, whether it’s checking miles of fence on our own, roping a cow, bringing in our horse herd in the morning or leading a trail ride. When I first got to the resort he had some serious problems we had to work through, and that journey together makes his reliability and kindness now that much more rewarding. He’s a very good friend of mine.

10. How do horses inspire you?

The thing that inspires me most about a horse is his capacity for forgiveness. What you need to know about a “bad” horse is that—99 percent of the time—whatever he is doing that you wish he wouldn’t, somebody taught him that. But if you treat him right, he’ll trust and love you as deeply as a child. I strive to have that strength in my life, and I think everyone could use at least a little in theirs!

11. What advice do you give to someone who has never been on a horse before? RELAX! This is good advice for any new adventure, but especially true with horses. Our horses are trained extensively to be safe and considerate to novice riders, so there’s no need to worry. The horses want nothing more than to please you, and a relaxed, happy rider is the best reward you can give them.

12. What are some of the funniest moments you’ve witnessed between guests and horses?

Oh boy … too many to count. Kids and horses are always a good bet for hilarity, especially a 6-year-old riding a 1,600-pound draft horse cross! Cattle drives are usually a pretty good time as well. There’s nothing like watching successful, mature adults screaming at cows. The Resort at Paws Up

Where to Shop at The Resort at Paws Up

Wilderness Outpost Paws Up

What you typically see in hotel gift shops, you won’t see at The Resort at Paws Up. We don’t do the typical gift shop thing around here. Instead, we’ve constructed the ultimate 11,000-square-foot rural boutique. The all-new Wilderness Outpost is the antithesis of a multipurpose building, but it serves multiple purposes.

The Resort at Paws Up Wilderness Ouptost main floor

This is the place where you can check in for your horseback ride or river rafting excursion and the location where you’ll relax in our loft and enjoy coffee and organic snacks (sure beats a food court at the local mall). You can snag that pair of Frye boots you’ve had your eye on or purchase a masterpiece from renowned artists. It’s also the place to chill in the afternoon, with outdoor seating and happy hour 4 p.m. to 6 p.m in the summertime.

You see, the Wilderness Outpost (formerly called the Paws Up General Store) is all about sourcing items with a story.

How to Put the Glam into Camping at Paws Up

glamping Paws Up

Luxury camping at The Resort at Paws Up is nature served on a gleaming silver platter. Known as North America’s premier glamping® destination, The Resort at Paws Up features five luxe tented camps that cater to families, couples and groups. Each safari-style tent features fine linens, comfortable beds, chic rustic furnishings, art-adorned walls, electricity, air-conditioning, heat and—most importantly—a camping butler at your beck and call. Learn from our Resort Manager, Charles Daenen, and our Glamping Operations Manager, Eddie Young, how we turned old-fashioned camping into glorified glamping.

Glamping Paws Up

1. What are the necessities to “glamp” up a camping experience?

Charles: Be flexible. You are not checking into a five-star suite with a 50-inch television and a minibar, but you are getting ready for an experience of a lifetime.

Eddie: Lots of s’mores, a sturdy pair of boots and a mind that’s open to new and fun experiences.

2. What’s the funniest request you’ve received from a guest?

Charles: I was once asked to sing happy birthday in my native language—Dutch—and it sounded awful, as I cannot sing. But I made the entire group laugh.

Eddie: A guest once asked me to remove ants from a tent, without harming them. (All ants were safely removed.)

3. What about a guest’s most unique request?

Charles: A guest wanted to have one of our ponies come to a camp and stay next to her child’s bed inside the tent until she fell asleep.

Eddie: I had a guest who wanted me to try to get an elk close enough to touch.

glamping tents Paws Up

4. What necessities should a guest bring to Paws Up glamping tents?

Charles: An open-minded attitude. You are going to experience a vacation like nothing you’ve done before.

Eddie: The tents have pretty much everything you could need, and if they don’t, we can get it for you.

5. What is the most unique aspect of Paws Up?

Charles: There are actually two things that make the glamping adventure unique: the location and the willingness of the staff to go the extra mile time after time. If one of those two things was missing, it just would not be the same experience.

Eddie: Our employees at Paws Up are special. They are friendly, genuine and passionate about giving our guests a great glamping experience.

6. Where is your personal ultimate favorite place to camp?

Charles: The deck of Cliffside Camp early in the morning, drinking coffee and watch the sunrise while eagles soar above the Blackfoot River looking for breakfast.

Eddie: All camps have features that make them individual, and I can honestly make a case for each being my favorite. Moonlight Camp has a special place in my heart, as it was the first camp I worked. It has the true feel of camping, being out in the open meadow and away from most of The Resort, so you definitely feel like you’ve stolen away.

The Resort at Paws Up Montana June 2013Dining Pavilion at River Camp

7. If you could tell guests one thing before they visit Paws Up, what would it be?

Charles: Do not hesitate to ask us anything, no matter how crazy your request is. We want to know what you like, but we are also really good at anticipating your needs.

Eddie: Be prepared to get dirty! Whether you are on ATVs, horseback riding or sitting around the campfire, it’s the great outdoors, so—naturally—it can be dusty and dirty. A good pair of old jeans is sufficient here, as we don’t want to ruin your good pair.

8. What’s the one thing you see guests most often forget to pack?

Charles: Sunscreen.

Eddie: A cowboy hat. If you don’t have one, don’t worry. We have a huge selection of hats in the Wilderness Outpost, and you will be feeling country in no time!

9. If you could have one famous camper come stay at the ranch, who would it be?

Charles: Bear Grylls—I’d love to have him run a wilderness workshop.

Eddie: Louis L’Amour. I grew up reading my dad’s old books while we were camping, and he was by far my favorite storyteller. I would love to sit around the crackling fire as he told stories of the Old West, gun-slinging cowboys, outlaws and bandits that would keep me intrigued for hours.

10. How did you become a camping butler?

Charles: I am too old for that now, but if I—just like Cher—could turn back time, this would have been my favorite summer job. Most of our butlers are referrals from other employees.

Eddie: I started working at the Resort as a summer job during college, and it has easily become one of my favorite jobs I have ever held. Being outdoors and helping guests enjoy themselves while glamping is a fun and challenging job, but it is highly rewarding when you see the smiles and continually have guests who don’t want to leave at the end of their stays!

Get Hooked At The Resort at Paws Up with Ultimate Fly-Fishing

Fly fishing has been around for hundreds of years, but its popularity continues to increase. What is it about this sport that is so captivating? If you experience fly fishing at The Resort at Paws Up, you will understand after just one outing. Fly fishing gives you the opportunity to relax and spend time in nature, while also challenging yourself with a cool sport that’s perfect for families or individuals. And once you’re hooked, fly fishing may become one of the best excuses for travel.

Montana is known for its abundant fly fishing, and Paws Up itself hosts 10 miles of the Blackfoot River—arguably one of the most famous fly fishing rivers thanks to the movie A River Runs Through It. At Paws Up, we offer spin rods for guests who are more comfortable with this style, but only for independent fishing. All of our guided excursions are strictly fly fishing, and all of our guides are Paws Up staffers, so you’re guaranteed the best learning techniques, assistance and service. We offer a fly fishing experience to remember.

The quality of fly fishing during the next three weeks dramatically increases. “With the water levels continuing to drop and the river getting clearer, the fishing the next couple of weeks will be off the hook! Pun intended,” says Montana Outfitter Justin Capps. “The next couple of weeks we will see most of our summer hatches. With the salmon fly hatch winding down the fish will start to turn their attention toward other aquatic insects. Golden stones, yellow sallies, Pale morning duns, Green drakes and caddis will make up the majority of the bugs we will see. Also, hopper season is just around the corner. Grasshoppers will start moving toward the water for greener grass, and once there they will accidentally get blown into the water by the afternoon breezes. Trout can’t resist them, so it’s a win-win,” says Justin.

At The Resort at Paws Up, we also have an on-site stocked pond that children who are just learning to fish can visit. Spin rods are used here, and it’s always a huge hit. The Resort at Paws Up is an angler’s retreat located within the “golden triangle” of western trout fly fishing. It boasts legendary rivers on property or nearby—including the Blackfoot, Bitterroot, Clearwater and Missouri. So whether you’re checking off a few more Montana rivers from your wish list or are ready to pioneer into some true trout wilderness, this is the place for you.
